When The Ringside Restaurant Remodeled They Called On Imperial Walk-Ins

The Ringside restaurant, a Portland, Oregon institution since 1944, chose Imperial Manufacturing for new walk-in coolers and freezers during their recent remodel.

Imperial designed and built four new walk-in coolers and freezers for the remodel that expanded the kitchen, added a new 40-seat dining room, added space for 10,000 bottles of wine, and refreshed the entire restaurant.

The Peterson family, the current third generation owner/partners being Craig and Scott, wielded a soft touch when it came to refreshing the dining areas, but they pushed for big changes in the kitchen, starting with an additional 2500 square feet. That new space came in handy when Imperial designed and built three new walk-in coolers and a new freezer. Along with the spacious standard walk-in cooler using dry air to maintain product freshness, there is now a large walk-in cooler devoted to humidity-loving fresh produce. Another, smaller, walk-in cooler dry ages meat using a special air curtain when the door is opened to maintain a very controlled temperature and minimal air flow, this helps age the meat in a predictable way. The walk-in freezer is small by most standards, The Ringside focuses on fine dining where fresh foods are the rule.
